Hopi Red Dye Amaranth

A fast growing summer green for hot, dry climates. Leaves can be cooked like spinach and frozen for access during the cold months. Seeds are also edible but considerable effort to harvest. Leave them in the garden to attract goldfinches.

Plants are also often grown as ornamental.

Extremely drought tolerant, tolerant of poor soil, and a prolific reseeder.

Pollen can trigger hay fever in those with sensitivities.
